Lemon Curd Cupcakes

Recently at school I have made some, if I say so myself, delicious lemon curd cupcakes. They are a basic plain cupcake with a hole in the centre filled with lemon curd and then topped off with thick butter cream.

This recipe made 18 cupcakes.

For the cakes:

  • 200g caster sugar
  • 200g soft butter or margarine
  • 4 eggs
  • 200g self raising flour
  • 1 teaspoon baking powder
  • 2 tablespoons milk
  • A jar of lemon curd
For the icing:
  • 200g soft butter or margarine
  • 280g icing sugar


  1. Preheat oven to 190c. Place bun cases in a cupcake tray.
  2. In a large bowl add all the cake incredients apart from the lemon curd. Mix the ingredients until you have a smooth batter.
  3. Divide the mixture equally between the cases and bake for 20 minutes until golden brown. 
  4. Once cooked, place them on a baking tray and get a sharp knife and teaspoon.
  5. Cut holes into to the middle of the cupcakes, cutting halfway through the cakes. Spoon out the excess cake out.
  6. Spoon in lemon curd into the holes until full.
  7. Mix together the icing ingredients until thick and creamy.
  8. Either pipe or spoon on the butter cream over the top of the cupcakes
  9. Dig in!

I have never tried making these cupcakes before but I thought I should give it a go. They actually turned out really nice and I would definitely make them again.
